Pies and Cake Recipes
Nothing invokes the idea of a country kitchen more than the thought of a pie or cake cooling on a windowsill on a bright Spring or Summer day. So in that spirit, we have a few recipes for you to consider for your next baking adventure. After all, once you have the kitchen themed the way you like it,  you might as well take the next step and bake something delicious to celebrate!

Butter Cake

Cake Ingredients 1-1/2 cups butter softened
2 cups sugar
4 eggs, room temperature
3 cups flour
1-1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 cup buttermilk
1 Tbsp. vanilla
Butter Sauce Ingredients 2/3 cup butter
1 Tbsp. vanilla
6 Tbsp. water
1-1/2 cups powdered sugar
Directions 1. Preheat oven to 300 degrees F. spray a 10-inch springform pan with cooking spray
2. In a heavy-bottomed saucepan, heat the water, sugar, and salt over medium heat until the sugar is completely dissolved: don’t let it boil
3. Meanwhile, melt the chocolate in a double boiler. remove from the heat, and beat in the butter with a hand mixer, one piece at a time, until the melted completely. Add the sugar mixture, and mix well. then beat one egg at a time. Pour into the prepared pan.
4. Bake for 45 minutes, and then remove it from the oven even if the center isn’t set. Refrigerate overnight before removing from the pan. Serves 8

Gluten Free Flourless Chocolate Cake

Cake Ingredients 1/2 cup water
1 cup sugar
1/2 tsp. salt
18 0z. bittersweet chocolate (60 percent cacao)
1/2 cup butter
6 eggs
Directions 1. Preheat oven to 350 degrees F. grease and flour a 9X13 inch cake pan
In a large bowl
2. In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, and thoroughly mix. In a sperate bowl, combine the flour, baking powder, baking soda, and salt. Add the flour mixture and buttermilk to the butter mixture, then add the vanilla. Pour the batter into the prepared pan.
3. To make the butter sauce, combine the butter, vanilla, and water in a medium saucepan over medium heat until the butter is melted, stirring constantly. Beat the powdered sugar. Pour the butter sauce over the batter.
4. Bake for 40 minutes or until a toothpick inserted in the middle of the cake comes out clean. Serves 15-18

Peach Pie

Pie Ingredients double crust pie dough
4 cups peaches, sliced with skin on, if desired
1 cup sugar
1/4 cup all-purpose flour
2 Tbsp. lemon juice
1 tsp. lemon zest
1/4 tsp. nutmeg
1 Tbsp. butter, cut into small pieces
1 Tbsp. sugar for top crust (optional)
Directions 1. Preheat oven to 375 degrees F. and line a 9-inch pie pan with the dough
2. In a large bowl, combine the peaches, sugar, flour, lemon juice, zest, and nutmeg. Mix well, and then pour into the pie shell. Dot the top of the mixture with butter.
3. Arrange the top crust over the filling, and seal it by pinching the top and bottom crust edges together. Slash several 1/2 to 1-inch holes in the crust near the center to allow to escape. Shield the edge of the crust with foil or a crust guard.
4. Bake for 25 minutes, and remove the foil or crust guard. Sprinkle the top of the pie with sugar (if desired), and bake for 20 to 25 minutes or until crust becomes golden-brown
5. Cool on a wire rack for at least one hour before serving. Serve as is or topped with vanilla ice cream, Serves 6-8
